Nan Ning Ning, owner of the Sushi Shop on the Fleury boardwalk at the corner of Fleury and Papineau, has always loved sushi. It was his confidence in the Sushi Shop franchise that led him to open his own restaurant. Nan already had knowledge of sushi preparation and, according to him, it takes about six months of training to be able to prepare quality sushi. This is reflected in the work of his experienced team, trained every six months by the head office when a new product is released.
New dishes are developed by the head office, although Nan is always open to customizing sushi at the request of a client, if he has the ingredients on hand, although he does not guarantee the taste of the hybrid combination.
