Charles Bizeul loves meat. A lot. And his love of meat, among other things, led him to opening a butcher shop with a spectacular look, located in Griffintown. As the chef at Le Hachoir restaurant for three years, Charles, along with his business partner and co-owner of Le Hachoir, Jean-François Corriveau, developed the butcher shop project.
Charles perfected his art under the principles of neo-butchery during a five-month training period at the famous Fleishers Craft Butchery in New York City. When a perfect location became available very close to the Grinder restaurant, Boucherie Grinder was finally opened in June 2015.
Old-fashioned butchers disappeared several decades ago, only to reappear to meet the growing needs of consumers who care about the quality and source of their meat. To meet this demand, Grinder restaurant has opened its own butcher shop, which specializes in aged meat, with a New York-trained master butcher. They sell beef, including high-end products such as Quebec Wagyu beef and 1855 Black Angus beef, poultry and sausages, as well as sauces and prepared dishes.
