“I don’t think the burger thing is a fad. I wouldn’t have done something, which I thought had a short lifespan,” explains Johnny Prassoulis, owner of Holy Chuck, a burger joint in the Yonge and St. Clair neighbourhood in Toronto. “I think burgers have always been a favourite of everybody and there’s very few of us who are doing it right,” he says.
From the outside, Holy Chuck looks like your regular burger dive. It lacks the branding perfected by other well-known burger spots in the city like Big Smoke Burger or The Burger’s Priest. But take a peek through the all-glass windows of the small 15-seat location on Yonge Street and you’ll quickly realize that there’s an exceptional buzz about the place.
At dinner, Holy Chuck is stacked with customers. Those seated at the unassuming bar stools facing the restaurant’s front window look beyond content, as they devour their burgers and fries while sipping on milkshakes. This is what people have lined up for – an authentic burger experience. And this is what Johnny strives to offer his customers, above all else.
